Herby cashew “cheese”

WHAT YOU NEED

  • 1 cup / 2.5 dl raw natural cashews

  • 2 tbsp nutritional yeast

  • 1 dl / 0.4 cup lemon juice

  • 1 dl / ⅓ cup water

  • 1 clove garlic

  • ½ tsp salt

  • Freshly ground pepper to taste

  • 2 tbsp flat leaf parsley, finely chopped

  • 2 tbsp chives, finely chopped

WHAT TO DO

Soak cashews in water overnight (at least 2 hours).

Drain and rinse the cashews and add to a high speed food processor or blender. Add the rest of ingredients except for the chives.

Blend for 1-2 minutes until smooth. You might need to stop and scrape down the spread from the sides of the blender.

Pour the mixture into a bowl, stir in the chopped chives and serve with fresh vegetables or crackers.
