Delicious and Healthy Vegan Meals for Kids

As more people are turning to veganism, finding vegan meals that children will love can be challenging. But don't worry! It is possible to create yummy, healthy vegan dishes that both children and adults can appreciate. Here are a few ideas for making delicious vegan meals for kids.

Vegan Tacos 

Incorporating vegetables into tacos is the perfect way to get your kids to eat their greens in a fun and tasty way. Start by sautéing some onions, peppers, mushrooms, or any other vegetables you have on hand in a pan with olive oil. You can also add black beans or tofu if desired. Next, warm up some tortillas in the oven or microwave and let your little ones assemble their own tacos with the vegetables they want. Top off with guacamole or salsa sauce and voila - you have a nutritious meal that all ages can enjoy! 

 

Veggie Burgers 

You don't need meat to make delicious burgers - vegetables do just fine! Start by blending together cooked potatoes, carrots, onions, garlic, black beans (or lentils), oat flour (or almond flour), flax/chia egg and spices of your choice until everything is combined. Then form patties with your hands and cook in a skillet on low-medium heat until golden brown on each side. Serve these burgers in buns with lettuce, tomato slices and vegan mayo or ketchup. Kids will love this plant-based alternative! 

 

Mac & Cheese 

This classic dish can easily be made vegan by swapping out dairy ingredients with plant-based alternatives like cashew cream cheese or nutritional yeast for a cheesy flavor without the dairy. Cook macaroni noodles according to package instructions then stir in the cheese sauce of your choice along with veggies such as broccoli or spinach for extra nutrition points! If needed, sweeten the deal by adding crumbled up vegan chips or crackers as a topping before baking it in the oven until golden brown on top - yum!
